
Any Finnish-American bakers? I am a New Yorker but my grandma was from Imatra. For Christmas this year I want to make archipelago bread, but I don’t think beer malts mean the same thing over here. Is this recipe referring to the syrupy malt extract used for brewing beer? Or crushed grain?

Beer malts are malted rye groats and you use it as it is, not as mash
The dry (rye) grain you could use for brewing beer as well. Not syrup
Usually Finns use this stuff, it’s dark crushed rye beer malt but if you can’t get it or similar malted rye you can substitute it with malt extract

It really does refer to dark, crushed rye beer malts.
If they are not available at your grocery store, try to find a homebrew shop (where you’d get supplies for making wine or brewing beer). They’ll sell you some and grind it for you. Ask for crystal rye malts. The rye malts sold here in grocery stores are crystal rye (rye malts that have been heated prior to crushing, thus converting their starch into sugar). Regular rye malts will not be as sweet.

How nice, I’m from Imatra. :p Will go there in a couple of days for Christmas and help with the preparations. Unfortunately can’t help you with the bread since I’ve never made it myself, but it sure is delicious, store bought that is.
Pro tip: if you have some sour milk left over use it with cereal
