Is there any improvements you think I should make? I could make it 2 pages long with a little more irrelevant experience, hobbies, and project descriptions. I’m also a complete beginner at Polish, should I include that in my resume? Thanks for any feedback you may have.

Just remember that the time taken for each resume to be read is relatively low so over verbose writing will likely decrease your chances. Anyways for the type of work you’re looking for, the lack of knowledge of Polish isn’t really an obstacle so you should be fine.
Remove the picture. Add bullets to the job descriptions. They’re impossible to read otherwise.
Also, you have coding skills like R and Python but no examples of how you applied them at work. If I received this resume I’d just assume it’s something you learned on your own but have no commercial experience in.
The summary looks good. The bullets are kinda meh. There’s room for improvement there for sure. It’s not exactly my area so I don’t know how competitive it is though. Maybe they’ll do.
You don’t need to add hobbies but do list any natural languages you speak.
Edit: are you authorized to work in Poland? If yes, it should be in your resume. Let people know they can hire you without hassle.
Less full sentences. More bulletpoints with highlights.
Add Polish at learning level. It’s treated good – eager to learn.

Remember – it’s all about the first impression and readability of the resume.
Lose the photo, add your location (city is fine, no need for a full address) or information about seeking remote jobs
The summary can be put in bullet points
If you have a residence/ work permit try adding that information, it can be advantageous for companies that need to hire urgently
Find ‚klauzula RODO’ in Polish and slap it on the bottom of resume just in case

Last time an HR shared a post saying that they only read a CV for 6-8 seconds. Do with this information whatever you want.
I would advise you to add some highlights like bullets or bolt texts.

I got my job offer using LinkedIn’s resume. None of the HR people can agree on things like photo, summary, etc. Everyone one of them tell different things. They just focused on the things you have done in your past and if you will able to do their tasks. I personally don’t put my photo. I think you shouldn’t be considered based on your outlook, race, age, origin, etc. Anyway, your resume looks good tho. Best of luck!
A good idea is to put highlights of qualifications on top, bullet points, list your best skills, etc, nobody reads long resumes unless they are seeking you specifically
