There are two great gems of Cyprus delicacies: halloumi and lountza. Halloumi is well known, but lountza stays in shadow. I suppose that’s because lountza is much more varied (including absolutely dry uneatable variety), and you need to spend significant efforts to find good lountza. But it’s worth it.
