American here. It’s not the same as what others are suggesting, as European brown sugar is not the same as American brown sugar. You should get molasses and mix it with regular sugar. We make our own and haven’t found a good replacement since moving here. Some american stores sell it, but it’s usually stupid expensive and not worth it.
I buy it in lidl regularly. Just search on a sugar shelf, there might be a few boxes in the corner.
So the biggest problem is that in the US brown sugar is finer and also slightly moist so the brown sugar you’ll find in stores in Poland isn’t familiar. You can use cukier trzcinowy but it won’t feel the same but it will bake the same.
For all my fellow Poles who don’t know, why OP has a problem finding brown sugar: There are different kinds of raw sugar and they differ in taste, smell and consistency.
The most popular one in Poland is the light brown demerara sugar, while OP probably looks for the dark brown muscovado or turbinado.
in some better shops you can find “cukier muscovado jasny” so light brown sugar or „ciemny” so dark brown sugar, its with molasses so i think the closest thing to this brown sugar
You need to mix Molasses into normal cane sugar in order to get–either that or find a specialty place. I would just go to Allegro and grab a liter of Molasses. It’s something like 1 tablespoon per cup of sugar? I don’t quite recall, but that liter of molasses is cheap and will last awhile.
I’m not sure is it american like sugar, but you can try to find this: Dark Muscovado. Sometimes is available in hipermarkets (Leclerc).
This sub always teaches me about problems I didn’t know existed lol
OP, I have faced this struggle before. As you can see in the comments, the term “brown sugar” doesn’t translate so easily and it isn’t simple to buy the variety that is used in baking in North America.

In almost every grocery store
Lidl, Biedronka, and almost every larger supermarket.
Where did you look, in a shoes shop?
Look for Sante brown sugar it’s in almost every grocery store. It’s way cheaper than Diamant and you support polish company.

The good news is that the American version can be easily substituted with a mix of white sugar and molasses. You can find the proportions here: https://www.thekitchn.com/how-to-make-brown-sugar-23023181
I use this all the time, it works perfectly.
That’s couscous bro.
Try looking for it in korean stores, they usually have it but I don’t know if it’s the type you need
Makro cash and carry
You’ll find dry demerara in bigger markets like Auchan or Carrefour.

In the US brown sugar can be found in the poor neighborhoods.

Back in the 90s you could buy it anywhere, iykwim

I’m in Katowice and I get it at (forgive spelling) kuchnia świata. Muskavado is what you’d be looking for.
Cane Sugar is often called Brown and it’s commonly available. I remember seeing the other kind in store

I think they sell it in Polo Market, but I am not sure.
Ever try making it yourself? Use white sugar and a bit of molasses. Brown sugar
Go to the record store. Look in The Rolling Stones bin for the Sticky Fingers album.
