Fun fact, there is a word made entirely out of “Polish” letters – “żółć”.
I usually say “oh, that’s… impressive, it’s not easy to learn” and then usually hear something along the lines “yeah, but I’m already fluent in Mandarin and Finnish, and wanted a new challenge”, so I can only go “holy shit”. That or “I’m not sure it’s a good idea, our grammar is stupidly overcomplicated” when someone mentions they’re thinking of learning Polish. If they want to tackle the challenge – awesome. But it’s silly to go unprepared.
Also – the only time I get annoyed about it is when people say that ENGLISH is difficult. Like?? I’ve learnt it by reading comic books! English is the internet language precisely because it’s easy to learn, making it accessible? “Oh yeah, you’re from Poland, it must’ve been difficult to learn all the English tenses” – bitch, have you heard of *Polish* grammar??
