
My good friend lived for almost a year in Iceland and she was absolutely in love with your country. 10 years later she still talks about it like it was the best experience of her life.
Today we were eating some cake and she mentioned that for her birthday in 2013 she got the cake of the year, and that it was the best cake she ever had. Her birthday is coming up and I would love to bake a similar one for her. All she mentioned is that it had caramel and it was “light”.
I have managed to find a photo and an article about it, but that’s pretty much it. I don’t expect to get the full recipe, obviously, but a name and/or the main ingredients would be nice, so I can make something similar. Can you help?
Tl;dr I am looking for the name and main ingredients of the cake of the year 2013 so I can make it for my friend

It’s kalled Rjómakókosdraumur and is indeed amazing. IIRC the baker that created it, Stefán Hrafn Sigfússon, works at Mosfellsbakarí. Mosfellsbakarí might be able to help.
Oh man, I remember that one, it was great. As someone else said it was from Mosfellsbakarí, but they don’t have older cakes of the year available at least in their Háaleitisbraut bakery. Maybe you can special order it.
