    Valencian mode on:

    – The meat should be a bit more done to give the rice more flavor.

    -The rice in the pic seem to be a little overhidrated maybe a bit more water/soup of what needed or wrong temperature, not much impact in the flavor of the dish but a texture thing, but this is my opinion of the pic so maybe it has the right texture.

    -The servig of meat are normaly 2 of each per ration but if you want more i recomend gettin a bigger “caldero” (paella pan).

  2. Don’t worry about the Paella Ayatollahs. Yours look good and surely tastes good too.
    I personally like the chicken a bit more cooked (Dorado we say in Spain) but this looks a lot better than many I have seen. Congratulations.

  4. I think rice should be the protagonist in a paella. There can be stuff like chicken or shell food, for instance, but it should be a complement to the rice. Keep trying and you’ll get there. Nice try, though.

  5. Next time put the rosemary on the stock, it looks very dry, so i assume you’ve not used it on the recipe, just for looks. I usually put it in around 90% of the cooking time, although idk how people use it

    Estoy de acuerdo con los otros que critican la cantidad de pollo comparado con arroz, en verdad es mas de lo normal. Pero bueno, eso facil se arregla con simplemente no cargando el plato de pollo al servir. Me gusta que hicistes la Valenciana, a mi me gusta mucho pero suele ser mas vista la de marisco.

  8. I agree with the criticisms that there is room for improvement but based on looks alone I would rather eat this than anything else shared in this post. Never hurts to have something to dedicate yourself towards improving. I am an American and it took me many tries to get my tortilla de patatas down, for example. A couple tweaks here and there and yours will be a 10.

  9. Im not from Valencia but that looks good enough for me. I’m not the most sybarite person ever but most of the paellas I see look nothing like paellas but this one does, maybe the ratio of “things”/rice is a bit unbalanced and chicken could be substituted with rabbit but it looks good.

  10. Soy española, pero esto ¿¿¿qué es??? Porque una Paella así con romero donde no se ve el arroz?? Quizás, sea un plato que no conozca, no sé.

  11. Not a paella I would like, just too much stuff and not cooked/composed correctly (paella rice is a bit tricky to get rick in terms of technique, especially for people who are learning) but the important thing is whether or not you enjoyed it.

  12. This is how I know Spain is prosperous. Someone posts about potentially serious issues and everyone shrugs. Somebody posts their paella creation and behold, comments bonanza.

  13. We went to Meson Madrid in Botox Raton for the Paella. It was long grain rice that was mixed with the meat & veggies right before it was served so, not paella. We sent it back. The waiter argued by saying we didn’t know wht true paella was. My wife, raised in Bilboa and Madrid, demanded to talk to the chef. When he came out all hot and bothered, I simply told him that I’ve had better paella from a gas station cafeteria (they are actually pretty good, considering that they are gas station cafe’s) in Valencia. They took the food away and ignored us for the rest of the night. They didn’t last much longer.
