
I spent 10 days in Finland with my girlfriend who already lives there and I had the best first experiance i could of imagined. We got a airbnb cottge near Lahti and the views were incredible. I got to try afew new foods like salmon soup, karelian pies and maksamakkara (think thats what it was called, liver sausage). I loved every single one of them. Im coming back in December and want to try abunch of dishes that will be availible around that time of year. Reindeer is already on the list. Any other suggestions?

For the authentic Finnish experience, find a lunch spot on a Thursday and have pea soup and pancake afterwards.
Xmas food is usually a lot of root vegetables made into casseroles. Historically not much else was available. The main dish is usually a roast ham served with mustard, but some people have a stuffed turkey instead. Coastal folks might have lutefisk and/or pickled herring too.
While reindeer is perfectly fine in any form, try to sample some kuivaliha aka reindeer jerky. It’s rather expensive outside Lapland, but jerky always is. It’s cured in early spring when it’s still below freezing so that all precipitation is snow, so the air is quite dry.
