Spar are a rip off everywhere.
The barcode numbers on the Shelf Edge Label (SEL) does not look like the same numbers on the bottles barcode. The SEL looks old and is probably the usual price for the non special offer version. Usually special offers like that import directly to the till system at the RRP, unless a store increases the price themselves , which some might. I would be interested to know of OP actually bought the product and if they charged €2.50 or if they are just making assumptions and its just some spar employee didn’t bother putting a new SEL on the shelf because the correct price is marked on the bottle.
It’s actually across the street from the station, so it has huge footfall daily. At lunchtime, the queue is out the door. The shop un Connolly Station charged €0.40 more for the same bottle last weekend. Probably increased everything for the festivals.
In a more positive note, their deli is divine imo
Spar is actually the worst. 11.99 for a jar of Kenco. 8 euro for 2 Rolls of Plenty Kitchen Towels

I’m not defending them but I would like to know what the rent is on this premises; I knew one Dublin inner city bar that had their rent nearly double so they had to shut down.
Similar in Eurospar, hunky dories, RRP 2.50 for a 6 pack. Shelf price was 3.29.
I didn’t buy those hunkies.
It will scan through as €1.35, barcode on bottle is different to that on the label.

had something similar happen to me in Lidl recently. Bought a few things. sandwich was supposed to be 30% off. When i got out into the car and had time to look at the receipt turns out it wasnt.
