The beet salad is called “cremeux betterave”, I’m not sure what it is exactly. Any ideas?

This kind of duck is “confit de canard”. Ducks that were feed to make foie gras are really fatty and are cooked in their fat with the skin and a shitton of spice and salt for like ~12h at very low heat. Then its canned. You can heat it again for a few minutes and it will be incredibly good. This is what lies in this plate When I do it i gather the liquid fat, get it through a filter, store it in a jar in the fridge for later use in the kitchen. Typical French dish, wonderful canteen for 6€43.
