Sunday lunch: Lasagne, Involtini with a side of roasted potatoes, chestnuts roasted in the fireplace to conclude (but I forgot to take a picture)

Together with my mother we started cooking at 10:30 a.m. (for seven people)
We made lasagne as a first dish, there was just enough to give everyone a second helping 🙂
Then involtini (meat rolls) in the Sicilian style are made with thin beef slices, inside they have a filling made with:
– a piece of mozzarella cheese
– a mixture made of: bread crumbs, tomato extract, grated cheese, milk and spices
– a thin slice of ham
They were then cooked in the oven on a bed of laurel and with red onion slices between them
As a side dish for the Involtini I made roasted potatoes, i am particularly proud of how my roasted potatoes have evolved while cooking during lockdown, I thought I had made more than enough of them but probably three more small potatoes would have been better
We did not prepare a dessert but we did have time to roast some chestnuts on the fireplace to accompany the fruit, they came surprisingly well but I forgot to take a picture of the chestnuts
