  1. May I give you a tip to improve your Schnitzel? You should use more oil for frying it. The Schnitzel has to swim in it and is not allowed to touch the pan. Your Schnitzel will have no black spots then.Also you should constantly move the pan to get air between the meat and the breading.

    Furthermore your Schnitzel is very thick. If you mane it thinner it will take less time for it to finish and it will stay juicy inside. Then you will not need the sauce that destroys the crispy breading.
