I discovered my love of duck last fall when I was travelling across Europe. We don’t typically serve “game” animals in the USA which is a shame.
I was apprehensive about this trip due to the stomach issues I had been having throughout my life that had recently reached an acute point. Although I love to eat and cook, food did not love me back. Travel was a double edged sword, I craved seeing new places meeting new people and trying new foods but these moments of exploration were often interrupted by unpredictable pain, discomfort and a loss of energy.
Not long ago I tested positive for several major food allergies including soy, wheat, nuts and white fish. My entire diet changed overnight.
To my absolute delight most of the food I had in Europe did not bother me like their counterpart in America would. I’m still seeking answers as to why, but for now want to share my rekindled passion for eating, cooking and discovering amazing food that makes you feel great. I fell in love with the attention to detail and ingredients that many people share here. I was able to have a small amount of wheat in sauces without it bothering me. I still avoided bread and beer but found I did not have to adhere strictly to a wheat-free diet if it only contained trace amounts such as in a broth or sauce.
Specifically duck confit was my favorite meal. This one above was from a hotel restaurant in Prague that was just off the path from the magical Charles Bridge. Served with parsley potatoes on a bed of red cabbage it was exactly what I was looking for after a day of exploring Prague Castle and Mala Strana.
