Spinach pancakes filled with ricotta, cashews and cheese

  1. **Ingredients:**

    **Dough:**

    – 90g flour
    – 1 egg
    – 150ml plain yoghurt
    – 1 tbsp oil
    – 200g spinach (frozen)
    – nutmeg
    – salt
    – pepper

    **Filling:**

    – 1 tbsp oil
    – 3 onions
    – 225g ricotta
    – 4 tbsp plain yoghurt
    – 50g Gruyère (I chose a similar Swiss cheese that’s vegetarian)
    – 1 egg
    – 125g cashews

    **Garnish:**

    – 50g Gruyère

    **Directions:**

    1. Cook the spinach.
    2. Mix the ingredients for the dough, adding the spinach last.
    3. Fry the pancakes in oil for about 3 minutes on each side.
    4. Slice and fry the onions. Chop the cashews and grate the cheese. Mix with the rest of the ingredients for the filling.
    5. Put the filling on top of the pancakes and fold them in half.
    6. Put the pancakes on a baking sheet and garnish with cheese. Bake for about 15 mins at 180°C.
