So my wife is Polish and every time she makes pierogi she thinks she is gonna make 100 of them and makes way too much filling. The filling is honestly so delicious I could just eat it by the spoonful, so instead of wasting it I use the leftovers to make pierogi lasagna. She claims it’s sacrilege to the name and honor that is the noble pierogi, I say it’s delicious and doesn’t matter, also it makes a great dish to share at a party etc.

It is a crime. But perhaps not in the country that you are currently in. If you are in Poland then expect sad looking men knocking on your door any minute now.
Eh to each their own. There’s nothing inherently wrong with it, and frankly pierogi lasagna tastes delicious, it just carries quite a stigma around it because of the pride and effort that goes into so many homemade polish dishes, but if you enjoy it then that’s Al that matters.
Does she actually use lasagna for it? If it tastes good, I don’t see any problem.
My mom makes naleśniki (crepes) with pierogi filling. It’s delicious. She’s 100% Polish, living in Poland.
Cabbage roll casserole is another one like this.
I personally think there’s no such thing as “sacrilege” when it comes to food. If it tastes good, do it.
My only thought about this particular dish is using semolina lasagna noodles would seem like it would give it a bit of a weird texture, but I wouldn’t knock it until I tried it
No, it’s a weird lasagna.
Crime for me is using chease in them. I hate it.
What sacrilege? This is good housekeeping. If something edible, much less actually tasty comes out of it, so much the better!
That is… as long as you don’t call this monstrosity “pierogi” ;P
Pierdolasagne
she has to make them awesome cuz the filling is always INSANE GOOD i so understand you glad you found a way to enjoy it in second dish mate!
