My guess is that this is exactly what Russia wants. Them destroying grain depots was (imo) also to put uncertainty for insurance and shipping companies to do business there.
Easier to scare the companies than having to monitor ships and sink them.
Seems like the best solution is to have some NATO ships go escort those grain barges.
HMS Queen Elizabeth is working up at the moment, should be available for the relevant period.
