It’s been 25 years this week since I visited Lietuva. To mark the anniversary (šaltiversary?) I made some pink soup. The temperature is hitting near 40C and šaltibarščai really “hits the spot” as we say for a summer meal. Normally we would have big bowls of it and nothing else, but tonight I added some hasselback potatoes baked with smoked duck fat and garlic.
Also. Whenever I mention this soup to people they ask if I meant to say “borscht” and I just want to punch them.
