  1. Spicy ham and turkey egg fried rice.

    Shred the meat. Toss on the pan in a drop of oil. Stir briefly. Add the leftover rice. Add some paprika, garam masala and spice bag seasoning. Beat an egg. Add soy sauce to the pan. Once it’s sizzling, mix, then push rice and meat to the side and pour in the egg. Scramble in the empty space. When just cooked through, take it off the heat and mash it to bits. (I do this with the same spatula yoke as I cook the rest of the dish). Put back onto he heat. Mix scrambled egg through rice. Pour a small drizzle of sesame oil over the rice and mix. Reduce temperature and tidy up. Once tidied up, you’re ready to plate. (Turning down the heat prevents burning, but also gives the sesame oil time to cook through).

    This was my lunch today. I used about 1 to 1.5 tablespoons of oil, and maybe 2 teaspoons of spices in total.
