This looks honest. The glazing is shiny (as it must be) but maybe there is *slightly* too much of it (you are supposed to see the crust on the sides, and it is supposed to be slightly shallower as well). It is hard to tell whether the dough is correctly baked (it is supposed to be quite crispy). The filling seems correct (not grainy). Congratulations!

So is the key here to make sure to pick them when they are ripe to perfection?
Looks great I would maybe suggest a little less glazing on the sides to show the crust a bit.
We obviously can’t taste it but the mousse inside should be light and the glaze should have a deeper chocolate taste.
Make sure that the mousse inside is less sweet than the glaze.
