The animal designs on old Irish currency, who designed them? Was he from Ireland?

The only one that looks similar is the salmon. But I love the designs. Apart from the mouth of the fish. Is that a bit odd looking like an earwigs tail. And I can’t make out the bird on the right. I’m sure it’s not a dodo.
