  1. This is a sour milk curd made as follows: raw, unpasteurized milk is fermented for 2-3 days. sour cream forms on top. Collect the sour cream with a spoon in a separate container. Heat the rest in a water bath to a temperature of 60 degrees, boil it a little and strain it. After straining, the cottage cheese and liquid remain.
