Cassoulet, a regional dish in Carcassonne, France

  1. The cassoulet is a traditional bean soup from southern France, and it has many variations depending on the region and the available ingredients each season (but each town will tell you they have THE real, original recipe).

    We ate this one when we visited the medieval citadel at Carcassonne, and it has beans, bacon, pork meat, sausage and a piece of preserved goose. This restaurant puts the served dish in an oven for a while so everything on the surface gets a bit crispy. Absolutely delicious and it fills you for a couple of days.

    With wine because of course.

  3. If you want the best cassoulet, you need to go to Hostellerie Étienne in a small town called Labastide d’Anjou. If you talk to anyone from Castelnaudary, they will say that cassoulet was born there according to legend. In any case, it’s hard to beat a good cassoulet. Truly delicious
