For eggplant: slice it in your prefered shape, put it in water for 20-40 minutes, then dry it and fry it until it loses ~40% of it’s volume and gets golden, add salt and honey on top of it. I used oak honey today, many recipes of this dish also use molasses instead of honey.
The “meatballs” weren’t made by me, they were bought in the supermarket.
Tried eggplant for the first time this week. Soaks up butter like sponge, but very delicious. Great with fish.
