I had some really delicious bread in Stockholm at a restaurant called Tradition a few years ago. It was dark brown, a bit dense and a very licorice taste to it. I’ve tried searching for licorice bread recipes but can’t really find anything close. Any help would be appreciated!

vörtbröd?
It’s vörtbröd (wort bread) and what you are describing as licorice taste is probably anis and fennel.
In the US it’s sometimes called “[limpa](https://en.wikipedia.org/wiki/Limpa)”, the Swedish word for loaf.
The best vörtbröd has raisins in it
If you’re in the USA, B&M brown bread in a can is similar
