Any particular reason for keeping the hog on the ground instead of hanging it to drain the blood and cut it up?
I remember my parents doing this exactly the same way, but we put the pig on a wooden table so that meat doesn’t get dirty.
Glad to see skin can be eaten. Most of sellers don’t use enough gas.
Is the pig going to be ok?
How do you call in Ukrainian when you cook the pig fat to get crunchy bite sized snacks. Here in Croatia we call it Čvarci. This doesn’t seem like a very effective way. Especially draining the blood with a cup. Very interesting though.
