More than likely a stoat, but could be mink or (less likely) a pine marten. I’d rule out weasel since Ireland doesn’t have them as far as I’m aware.

Hard to tell the size but looks like a stoat or someone’s pet ferret that got loose. There are feral ferrets that run the countryside.
