prawn tacos with saffron rice, chargrilled courgette, cabbage slaw, esquites (corn) & guacamole

  1. fantastic and cheap way to use up leftover prawns & veg that was about to be thrown out. plus, my mexican-american husband said it tasted like home, which was one of the best compliments I’ve ever received!

    – prawns tossed in a mexican seasoning mix, extra garlic, and fried in avocado oil
    – canned corn was drained and chargrilled, then tossed in a sour cream / mayo / garlic / chilli & boursin mixture
    – courgette is just grilled with salt and avocado oil
    – guacamole was an avocado, grated garlic, juice of a whole lime, and plenty of sea salt
    – cabbage & onion is shredded, then dressed with lime juice, olive oil, & salt
    – rice steamed in chicken stock and a few saffron fronds

    total cost about £3.75 (€4,40) per plate – extra rice & cabbage salad is not pictured
