As a Yorkshireman, I am happy to offer you citizenship.
My recipe is:
140g flour
140ml milk
4 eggs
Maybe 5 grams of salt
A good few twists of pepper
Beat the flour and eggs together to make a thicccc paste, then drizzle milk in while whisking constantly. You want it to be a thin consistency – about the thickness of a smoothie, maybe slightly thinner. It needs *really* whisking for like 5 minutes to help aerate the batter.
Cake/muffin tin needs goosefat or beef tallow for best results, but high smoke is fine. Crank the oven up to at least 200^(o) C and leave the tin in to heat the oil.
When you’re pouring it’s important to be fast so have your mis en place. I like having the hob clear with the big burner lit, so that in keeps the heat in the tin. I have the batter as close to the oven as I can to it so that I can fill the tin within about 10 seconds and then put them back in. It’s important to keep the oven open for as little time as possible.
