LAKE CHARLES, La. (KPLC) – Just as the paint dried on the new Coffee:30 Cafe on Ryan Street, where Salt Revival Oyster House was housed just weeks ago, the shuttered seafood restaurant has filed a lawsuit against Pig & Rooster Oyster Farms.

The farm was formerly known as Salt Revival Oyster Company. It served as Salt Revival Oyster House’s local oyster supplier. It was renamed Pig & Rooster Oyster Farms in March of this year, according to the Secretary of State’s website.
Salt Revival is seeking less than $10,000 in damages from Pig & Rooster Oyster Farms. The restaurant alleges it received oysters that were “dead, contaminated, discolored, or otherwise unfit for use and consumption.”
The oyster farm responded by filing a third-party demand against Venture Global, claiming the LNG company is the reason they couldn’t fulfill their contract. The farm alleges Venture Global’s August 2025 dredging spill inside No Name Weir caused silt and mud to cover their floating oyster cages.
Pig & Rooster Oyster Farms says the “vast majority” of oysters harvested from their 5.2 million oysters in cages have been unfit for sale or consumption since the spill.
The farm also alleges Venture Global violated its coastal use permit due to the leak. They are seeking damages and permanent injunctive relief to halt Venture Global’s dredging operations until the company complies with its permits.
Salt Revival representatives declined to comment on the lawsuit.
“We stand by the allegations in our lawsuit, and hope to end the matter quickly, as it is ongoing,” Tom Filo of Pig & Rooster Oyster Farm said.
Venture Global declined to comment but stands by its previous claim that its sediment spill had no significant impact on Big Lake or public oyster beds.
At a Cameron Parish Police Jury meeting and in an official report, the Louisiana Department of Wildlife and Fisheries acknowledged sediment deposits on some of the public oyster reefs in Big Lake nearest to No Name Wier. They also noted a slightly higher mortality rate. However, they did not find that either of those would affect the public reef oyster population. They also did not connect the sediment discharge to Venture Global.
