The owners of an award-winning Subiaco distillery have plans for a “luxe, elegant” small bar on Hay Street.

Wolfsbane has been operating from its restored premises at the corner of Hay Street and Coghlan Road since last year, where they produce and sell gins, vodkas and a limoncello.

In just 10 months, they won 28 international gold medals and most recently picked up gold and silver at The Spirits Business Global Gin Masters awards in London.

The family owned business has applied for a tavern licence to create a small bar to sell their products, alongside a wider range of “cocktail staples,” “crowd favourite” spirits, wine and beer.

Distiller Gregor Robinson said in the application they wanted to welcome local residents and workers in the proposed bar, and also host a range of functions including art showings, sundowners and small musical performances.

Wolfsbane currently sells its products via phone or online orders but Mr Robinson said they sought to sell to customers over the bar.

Mr Robinson’s statement also said they planned to produce their own wine to sell in the bar but this would “take some time”, so wanted to sell other wineries’ offerings before then.

“Our existing production equipment such as temperature and pressure-controlled tanks and brewhouse will be used to produce wines,” he said.

“We have carried test batches to confirm it is feasible to process grapes and make wine from scratch in our facilities.”

Key features of the proposed venue include offering a “bespoke, curated selection of alcoholic and non-alcoholic products” to enjoy on site, with the bar to comprise “beautifully restored and thoughtfully decorated spaces that feel welcoming and luxurious”.

Mr Robinson also intends to sell Wolfsbane and other products from speciality producers as “packaged liquor” over the bar.

There is no commercial kitchen, so they plan to offer pre-packaged snack items for purchase and arrange professional catering for events.

The application seeks to operate until 11pm Sundays to Thursdays and until midnight Fridays and Saturdays.
