Open-fire cooking has been popular in Australia for a few decades now. But in Sri Lanka, it never went away. Sri Lankan-born chef Gayan Pieris, founder of well-regarded Red Hill restaurant Many Little<\/a>, is raring to cook on Agnii\u2019s dara lipa<\/a> (an open clay hearth) and poranuwa (an enclosed hearth more akin to a kiln or oven). \u201cIn a commercial kitchen context, I don\u2019t think it\u2019s ever been done before,\u201d he says. Enter Bar Gabi, the degustation destination\u2019s younger, louder sister. Dafina, St Kilda<\/p>\n

Fleurie, Armadale<\/p>\n

Since it opened in late 2022, Hot Listed Clover<\/a> has been one of the city\u2019s sharpest wine bars. Owners Lyndon Kubis and chef Charley Snadden-Wilson are now planning their second venue together.
