A Swiss & Ale Polishire bagel (made with a locally brewed dark ale), Swiss cheese, house-made dijon aïoli, horseradish, and layered with 18-hour slow-roasted Certified Angus AAA brisket. It arrives at the table with hot au jus for dipping and kettle cooked parmesan crisps for the finishing crunch.
The Ironmaker Brisket is the result of the entire team at The Forge — Polishire Artisans and culinary team alike — working in step. Months of ideating, testing, and tweaking. But the story behind it goes deeper than the recipe. Certified Angus AAA Beef. Kitchen upgrades. A deliberate investment in ingredients and culinary expertise. And perhaps most notably, the development of an intentional process that produces tender, sliced brisket without relying on braising — all the benefit of carved, melt-in-your-mouth meat, achieved on their own terms. Father-daughter duo Glen Demetrioff and Rachelle Furtado built The Forge Bagel Co. as a place for the whole family to love, and the Ironmaker Brisket is an evolution for those who are serious about lunch.
The Ironmaker Brisket is part of The Forge’s growing afternoon menu. If you haven’t visited after 11am, this is a reason to start.
