{"id":112911,"date":"2026-07-02T11:29:38","date_gmt":"2026-07-02T11:29:38","guid":{"rendered":"https:\/\/www.europesays.com\/canada\/112911\/"},"modified":"2026-07-02T11:29:38","modified_gmt":"2026-07-02T11:29:38","slug":"calgary-restaurant-owners-debut-in-pitmasters-food-network-competition-next-week","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/canada\/112911\/","title":{"rendered":"Calgary restaurant owners debut in Pitmasters Food Network competition next week"},"content":{"rendered":"<p class=\"mb-4 text-lg md:leading-8 break-words\">Calgary restaurant owners John Jackson and Connie DeSousa are taking their barbecue talents to the small screen in a competition that will reward the winner $50,000.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Jackson and DeSousa are the owners of a number of Calgary restaurants, but it was their experience cooking with live fire, or over a wood fire or charcoal, that got them noticed for the Food Network competition show Pitmasters.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">The pair were approached by the American network to join the competition that sees Pitmasters, or chefs of cooking over live fire, cook over a 24-hour period.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">DeSousa, who is also known as the \u201cballerina butcher,\u201d and Jackson have specialized in cooking over a fire, particularly meat.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cWe\u2019ve been working on live fire for multiple years, and that part of it I feel is our biggest strength, being not only chefs, but being butchers,\u201d said Jackson.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Calgarians are invited to Charbar Mondays at 7 p.m. to watch the show. The pair can\u2019t give away much, only saying people will have to watch to see how they did.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cWe were very excited, especially for the opportunity to compete together because this is actually a team challenge,\u201d DeSousa said. \u201cSo there\u2019s nine competing teams, and all of us are competing for $50,000.\u201d<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Prior to filming, DeSousa and Jackson didn\u2019t know their competitors, but they all knew each other.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cIt\u2019s the elite pitmasters and live fire teams that we\u2019re going up against and we\u2019re the only Canadians,\u201d Jackson explained.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">The pair said their unique relationship helped them to stand out and adapt to cooking in a Utah desert with hardwoods such as oak, when they typically use birch in their Calgary restaurants.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">The SAIT graduates started working together soon after DeSousa graduated, moving around Canada and the U.S., before returning to Calgary to open Charcut in downtown Calgary. So it\u2019s that really cohesive culinary chemistry together that works 100 per cent in our favour.\u201d<\/p>\n<p>Calgary chefs were unknowingly training for grueling competition<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">For teams that went through to the next round, it was another 24 hours of preparing and cooking for the judges. The entire competition spanned six days.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">DeSousa said they were not intimidated by the 24-hour format of the show, which tested their physical and mental stamina. She compared it to the reality show Survivor, where people have to get by in difficult conditions with little sleep or resources.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Last year, the business partners and friends ran the New York City Marathon together, and they also prioritize each other\u2019s mental well-being.<\/p>\n<p><img alt=\" Connie DeSousa and John Jackson holding their medals just after completing the New York City marathon in 2025.\" loading=\"lazy\" width=\"960\" height=\"720\" decoding=\"async\" data-nimg=\"1\" class=\"rounded-lg\" style=\"color:transparent\" src=\"https:\/\/www.europesays.com\/canada\/wp-content\/uploads\/2026\/07\/5c1e2c0a62f026deee14809943ef50cd.jpeg\"\/><\/p>\n<p> Connie DeSousa and John Jackson holding their medals just after completing the New York City marathon in 2025.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cThe good thing is Connie and I are really at good points in our life when it comes to our mental and physical health,\u201d Jackson said. \u201cWe are in great shape. We also really look out for each other\u2019s mental health. When each say I\u2019m down, Connie will help bring me up. We take turns. So I feel like being at this point in our lives, both mentally and physically so fit, I think that that\u2019s another advantage.\u201d<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">That doesn\u2019t mean that cooking non-stop wasn\u2019t tiring.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cIt was one of the hardest things we\u2019ve ever done,\u201d DeSousa said. \u201cWe were so exhausted, but we are really proud of the show and what we featured on it.\u201d<\/p>\n<p>Friendships struck will bring Michelin Star chefs to Calgary<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Although the Calgarians started as the odd ones out, they soon made friends with their fellow Pitmasters, whom they continue to talk to on a group chat now that the show is over.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">DeSousa and Jackson said they plan to invite their new Pitmaster friends to Calgary.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">\u201cWe will be hosting a Michelin star barbeque series where we bring the chefs to Calgary and work with them in our restaurants.\u201d<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Catch up with the day\u2019s headlines, curated by our editors and delivered to your email inbox at lunchtime on every business day.
