This comes as demand declines in one of the most important export markets.<\/p>\n<p>The Gruyere cheese faced a 10% US tariff last year, which this year was raised to 12.5%. In response, producers cut production by 5% to protect prices.<\/p>\n<p>The cheese is effectively not selling, and the measure is intended to prevent an excess of stock. It also helps maintain a stable price.<\/p>\n<p>\u2013 Alexandre Murith<\/p>\n<p>Previously, the American market accounted for about 13% of Gruyere sales, with the cheese distinguished by a more pronounced flavor and aroma compared with Emmental.<\/p>\n<p>The reduction in production has hit farmers hard, but they refuse to reveal exact figures. For the most-exported variety of Gruyere, produced at lower elevations, the 5% reduction has persisted for a second consecutive year. For the variety produced by Murith, no reduction is planned for the next season.<\/p>\n<p>We were affected for much of 2026.<\/p>\n<p>\u2013 Anthony Margot<\/p>\n<p>We work daily to seek new markets around the world.
