Because <a href=\"https:\/\/www.foodnavigator.com\/Article\/2025\/02\/06\/cocoa-prices-hit-record-high-what-does-this-mean-for-food-and-beverage\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2025\/02\/06\/cocoa-prices-hit-record-high-what-does-this-mean-for-food-and-beverage\/\">record high cocoa prices<\/a> and growing concerns over supply chain resilience mean manufacturers can no longer rely on the much-loved commodity.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">So who\u2019s doing what in alt cocoa? (Image: Getty\/Ekaterina79)<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">One of the biggest signs that cocoa alternatives are here to stay is that the <a href=\"https:\/\/www.foodnavigator.com\/Article\/2026\/01\/14\/biggest-confectionery-companies-2026-announced\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2026\/01\/14\/biggest-confectionery-companies-2026-announced\/\">biggest confectionery company in the world<\/a> has begun experimenting with them.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">For years, the confectionery giant\u2019s response to cocoa supply challenges focused on futureproofing cocoa, not replacing it. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">It\u2019s invested heavily in climate-resilient farming, agroforestry, farmer training and supply chain traceability, while also committing to a segregated global cocoa supply chain by 2030.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">But earlier this year, Mars made its first significant move into cocoa alternatives, launching <a href=\"https:\/\/www.foodnavigator.com\/Article\/2026\/05\/05\/mars-goes-cocoa-free-with-planet-a-foods-choviva\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2026\/05\/05\/mars-goes-cocoa-free-with-planet-a-foods-choviva\/\">Balisto trail mix<\/a> containing ChoViva, a cocoa-free chocolate alternative developed by Planet A Foods.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">ChoViva is produced using fermented and roasted sunflower seeds, creating a chocolate-like ingredient that can be used in confectionery applications without cocoa.<\/p>\n<p>Nestl\u00e9<img decoding=\"async\" data-chromatic=\"ignore\" alt=\"Three 4-finger KitKat Nestle chocolate bars isolated against black background.\" src=\"https:\/\/www.europesays.com\/ch\/wp-content\/uploads\/2026\/07\/1783008134_239_JYWN24N4CRADFJ6ND7LXIDBFS4.jpg\" loading=\"lazy\"\/>Nestl\u00e9 is home to major chocolate brands including KitKat. (Image: Getty\/Panama7)<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Of all the major confectionery players exploring alternative cocoa, Nestl\u00e9 was among the first to put a cocoa-free ingredient into a mainstream consumer brand.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">In March this year, the food and beverage giant launched <a href=\"https:\/\/www.foodnavigator.com\/Article\/2026\/03\/10\/nestle-launches-cocoa-free-chocolate-with-choviva\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2026\/03\/10\/nestle-launches-cocoa-free-chocolate-with-choviva\/\">Choco Crossies Snack Vibes<\/a>, featuring cocoa-free chocolate alternative, ChoViva. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Rather than positioning cocoa-free chocolate as a direct replacement for traditional chocolate, Nestl\u00e9 has framed the technology as another tool to help futureproof confectionery portfolios against supply disruptions, climate challenges and commodity price volatility.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">As the world\u2019s biggest CPG, Nestl\u00e9\u2019s adoption of cocoa-free ingredients sends a strong signal that it\u2019s no longer about whether alternative cocoa has a future but how quickly it can scale.<\/p>\n<p>Lindt &amp; Spr\u00fcngli<img decoding=\"async\" data-chromatic=\"ignore\" alt=\"Lindor balls in multiple flavours.\" src=\"https:\/\/www.europesays.com\/ch\/wp-content\/uploads\/2026\/07\/1783008134_458_WZG6IY7SJNFTDDPEUXJDSUMYKQ.jpg\" loading=\"lazy\"\/>Lindt &amp; Spr\u00fcngli first signalled its interest in the alt cocoa category back in 2023. (Image: Lindt &amp; Spr\u00fcngli AG)<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Of all the premium chocolate makers, Lindt has emerged as one of the most active players in alternative cocoa.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">The Swiss chocolate maker first signalled its interest in the category back in 2023 when it partnered with Planet A Foods to launch a limited-edition vegan chocolate bar containing cocoa-free chocolate alternative, ChoViva. The collaboration gave Lindt an early opportunity to test consumer appetite for cocoa-free ingredients within one of its own branded products. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Since then, the company has broadened its focus beyond cocoa-free ingredients and into next-generation cocoa production technologies.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">In 2025, Lindt became a strategic investor in Swiss food-tech company Food Brewer, a start-up developing cocoa through plant cell culture. The company grows cocoa cells in bioreactors rather than on farms, creating cocoa ingredients designed to deliver the taste and functionality of conventional cocoa while reducing exposure to climate risk, land constraints and supply chain volatility. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">What\u2019s more, the investment isn\u2019t just about financial backing. Food Brewer says Lindt is providing technical expertise and industry know-how to help refine the technology and accelerate commercialisation.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Lindt\u2019s strategy differs from some of its peers as it\u2019s not focusing exclusively on cocoa-free replacements. Instead it\u2019s exploring multiple options, including fermented ingredient systems such as ChoViva and bio-identical cocoa produced through cell cultivation. (Image: Barry Callebaut)<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">As the world\u2019s largest chocolate manufacturer, and supplier to brands including Nestl\u00e9, Hershey, Mondel\u0113z and Mars, Barry Callebaut is in a unique position.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">And it\u2019s used that position to ensure all opportunities are explored.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Its most significant move came in 2025, when it announced a long-term commercial <a href=\"https:\/\/www.foodnavigator.com\/Article\/2025\/11\/06\/barry-callebaut-bets-on-cocoa-free-chocolate\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2025\/11\/06\/barry-callebaut-bets-on-cocoa-free-chocolate\/\">partnership with Planet A Foods<\/a>, maker of cocoa-free chocolate alternative ChoViva. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Under the agreement, Barry Callebaut is helping to scale and distribute ChoViva globally, giving manufacturers access to cocoa-free chocolate solutions through one of the industry\u2019s largest supply networks.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">It\u2019s also exploring the next frontier of cocoa innovation, partnering with the <a href=\"https:\/\/www.foodnavigator.com\/Article\/2025\/07\/29\/barry-callebaut-de-risks-chocolate-supply-chain-with-cultivated-cocoa\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2025\/07\/29\/barry-callebaut-de-risks-chocolate-supply-chain-with-cultivated-cocoa\/\">Zurich University of Applied Sciences (ZHAW)<\/a> to investigate cell-cultured cocoa, a technology that grows cocoa cells in bioreactors rather than on farms. The goal is to develop additional sources of cocoa that are less exposed to climate shocks while maintaining the taste and functionality consumers expect from chocolate. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">The company has stressed that alternative cocoa is not intended to replace conventional cocoa altogether. (Image: Getty\/Ekaterina79)<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">While some confectionery players are exploring cocoa-free ingredients, Mondel\u0113z International is taking a slightly different approach, investing in technologies designed to supplement \u2013 rather than replace \u2013 conventional cocoa.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">The maker of Cadbury, Milka and Toblerone has emerged as one of the highest-profile backers of <a href=\"https:\/\/www.foodnavigator.com\/Article\/2026\/04\/14\/celleste-bio-ceo-on-cultivating-cocoa-fat-in-a-war-zone\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2026\/04\/14\/celleste-bio-ceo-on-cultivating-cocoa-fat-in-a-war-zone\/\">Celleste Bio<\/a>, an Israeli start-up developing cell-cultured cocoa. <\/p>\n<p class=\"c-paragraph b-article-body-skinny\">It participated in the company\u2019s funding round and has worked closely with Celleste as a strategic partner, as both companies seek solutions to the cocoa sector\u2019s growing climate and supply challenges.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">That collaboration reached a major milestone in April, when Mondel\u0113z unveiled what it described as the <a href=\"https:\/\/www.foodnavigator.com\/Article\/2026\/04\/21\/worlds-first-cell-based-chocolate-bar-developed-with-mondelez\/\" target=\"_blank\" rel=\"nofollow noopener\" title=\"https:\/\/www.foodnavigator.com\/Article\/2026\/04\/21\/worlds-first-cell-based-chocolate-bar-developed-with-mondelez\/\">world\u2019s first milk chocolate prototypes<\/a> made using cultivated cocoa butter produced by Celleste Bio. According to the companies, the cocoa butter is bio-identical to conventional cocoa butter, delivering the same texture, melt profile and sensory characteristics as traditional chocolate.<\/p>\n<p class=\"c-paragraph b-article-body-skinny\">Unlike cocoa-free alternatives made from ingredients such as sunflower seeds or grape seeds, Celleste\u2019s technology cultivates cocoa cells directly, allowing manufacturers to produce cocoa ingredients without relying entirely on traditional farming.
