Chloroplasty, kter\u00e9 si v\u011bt\u0161ina z\u00a0n\u00e1s spojuje zejm\u00e9na s\u00a0fotosynt\u00e9zou, se tak zm\u011bnily v \u201emal\u00e9 tov\u00e1rny\u201c na tuto \u017eivo\u010di\u0161nou b\u00edlkovinu.<\/p>\n<p class=\"c_bB\">\u201eNa\u0161e studie poprv\u00e9 ukazuje, \u017ee vy\u0161\u0161\u00ed rostliny mohou stabiln\u011b produkovat myoglobin, jednu z\u00a0kl\u00ed\u010dov\u00fdch b\u00edlkovin odpov\u011bdn\u00fdch za \u017e\u00e1dan\u00e9 vlastnosti masa,\u201c uvedla pro <a data-dot=\"atm-link\" target=\"_blank\" rel=\"noopener nofollow\" href=\"https:\/\/www.sciencealert.com\/a-key-meat-protein-has-been-grown-in-lettuce-for-the-first-time\" class=\"c_N\">ScienceAlert<\/a> hlavn\u00ed autorka studie Alexia Groffov\u00e1.<\/p>\n<p>Co je myoglobin?<\/p>\n<p class=\"c_bB\">Myoglobin je b\u00edlkovina, kter\u00e1 se p\u0159irozen\u011b nach\u00e1z\u00ed v\u00a0kostern\u00ed i\u00a0srde\u010dn\u00ed svalovin\u011b obratlovc\u016f. Jej\u00edm hlavn\u00edm \u00fakolem je v\u00e1zat a\u00a0ukl\u00e1dat kysl\u00edk, kter\u00fd svalov\u00e9 bu\u0148ky vyu\u017e\u00edvaj\u00ed p\u0159i sv\u00e9 \u010dinnosti.<\/p>\n<p class=\"c_bB\">Sou\u010d\u00e1st\u00ed myoglobinu je hem obsahuj\u00edc\u00ed atom \u017eeleza, jen\u017e umo\u017e\u0148uje vazbu kysl\u00edku a\u00a0z\u00e1rove\u0148 se pod\u00edl\u00ed na typick\u00e9m \u010derven\u00e9m zbarven\u00ed masa. \u010c\u00edm v\u00edce myoglobinu svalovina obsahuje, t\u00edm b\u00fdv\u00e1 tmav\u0161\u00ed. Hov\u011bz\u00ed maso ho m\u00e1 nap\u0159\u00edklad v\u00fdrazn\u011b v\u00edce ne\u017e ku\u0159ec\u00ed.<\/p>\n<p class=\"c_bB\">P\u0159i tepeln\u00e9 \u00faprav\u011b se struktura myoglobinu m\u011bn\u00ed, co\u017e ovliv\u0148uje v\u00fdslednou barvu, v\u016fni i\u00a0chu\u0165 masa.<\/p>\n<p>Myoglobin m\u016f\u017ee vylep\u0161it chu\u0165 i\u00a0v\u00fd\u017eivovou hodnotu<\/p>\n<p class=\"c_bB\">Geneticky upraven\u00e9 rostliny n\u00e1sledn\u011b bez zjevn\u00fdch pot\u00ed\u017e\u00ed rostly a\u00a0schopnost vytv\u00e1\u0159et myoglobin p\u0159ed\u00e1valy i\u00a0dal\u0161\u00ed generaci. Obsah myoglobinu ve zv\u00ed\u0159ec\u00ed svalovin\u011b je sice p\u0159ibli\u017en\u011b desetkr\u00e1t vy\u0161\u0161\u00ed, auto\u0159i studie ale upozor\u0148uj\u00ed, \u017ee p\u011bstov\u00e1n\u00ed rostlin je na zdroje v\u00fdrazn\u011b m\u00e9n\u011b n\u00e1ro\u010dn\u00e9 ne\u017e tradi\u010dn\u00ed chov hospod\u00e1\u0159sk\u00fdch zv\u00ed\u0159at.<\/p>\n<p class=\"c_bB\">V p\u0159epo\u010dtu na hektar by tak rostlinn\u00e1 produkce mohla b\u00fdt konkurenceschopn\u00e1 a\u00a0z\u00e1rove\u0148 spot\u0159ebov\u00e1vat m\u00e9n\u011b vody a\u00a0vytv\u00e1\u0159et m\u00e9n\u011b sklen\u00edkov\u00fdch plyn\u016f.
