The Brunchery is a venue that consciously harnesses the potential of the day’s changing rhythm, creating a space that operates in two complementary modes. In the morning, it caters to the needs of staff from nearby offices, offering breakfasts, lunches and a quick takeaway service. In the evening, it transforms into an elegant restaurant with a signature cocktail menu and a more intimate atmosphere. This dual functionality is not merely a practical consideration, but the foundation of the entire interior concept. The design for the new space was created by architects from the CUDO: studio.
The project is located on the ground floor of the Towarowa 22 development, one of the key business hubs in Wola. The venue has been designed to transition seamlessly from the dynamic energy of the morning to the elegance of the evening. During the day, lightness and functionality prevail; in the evening, atmosphere and sophistication take centre stage. This shift in character occurs without altering the spatial layout, ensuring the interior retains its coherence whilst offering guests completely different experiences.
An important element of the design is the deliberate use of the building’s natural fabric. Exposed bricks, ceilings and flooring create a raw backdrop, which is juxtaposed with wood, fabrics and industrial details. The colour scheme and textures draw inspiration from the menu: morning pastries have become the reference point for light, soft materials, whilst evening wines – red and rosé – are reflected in the rich colours of the furniture and finishes. Fabrics, both sheer and opaque, add warmth to the space, whilst emphasising the texture of the walls and contrasting with the elegant joinery.
The interior is organised around a single, multifunctional element. The central piece combines display, serving, bar, social and entertainment functions. It houses the drinks cabinet, the kitchen serving hatch, the end of the bar, a tall communal table and the DJ’s evening spot. All other elements of the layout radiate out from this point – booths, shelving units, and a soft fabric canopy suspended from the ceiling. The orbital layout organises the space, defines natural circulation routes, and arranges the consumption and display zones.

The design employs several solutions to maximise the use of floor space. The back-of-house facilities are housed in a compact cube with a lowered upper edge, allowing for installations to run above it without encroaching on the guest area. The lighting has been programmed for various scenarios, allowing the interior to respond to the time of day and the nature of events. The changing display also plays a significant role: in the morning it showcases baked goods and takeaway options, whilst in the evening it features spirits and wines.
The design brings together seemingly disparate elements: raw reinforced concrete and elegant wood, industrial details and soft fabrics, morning self-service and evening waiter service. These contrasts do not compete with one another, but form a coherent whole that allows the interior to function in two modes whilst retaining a distinct identity.
The Brunchery plays an important role within the structure of Towarowa 22, a development designed as a modern business centre in Warsaw. The venue meets the needs of office workers whilst also attracting residents and visitors seeking an evening dining experience. In doing so, it reinforces the multifunctional character of the entire complex and enhances its appeal.
