Sir has opened at the Admiral Hotel, offering ‘global attitude, classical virtues, and uncompromising precision’.

The cocktail offering will revolve around the classics, with a particular focus on the Martini
The hotel is based in a former warehouse building by the harbourfront. The bar’s name is intended to ‘signal respect and politeness’, and subtly nods to the hotel’s maritime heritage.
Head of bars Leo Lahti leads the operation, following ‘many’ years of international experience from bars across Europe and Asia.
“Sir is the most ambitious project I have worked on,” he said. “We have focused on every single detail – from cocktails and the wine list to the food and service level. It should be a bar where you feel comfortable, yet where ambition is clear. The historic building creates a unique atmosphere that elevates the experience and makes it special. I am very excited to welcome guests and prepare Martinis at the tables.”
The bar will offer a Martini trolley, with bartenders working with the guest to create a cocktail to a bespoke specification at the table. Guests can choose from different gins and vodkas, vermouths, bitters and garnishes, with more than a thousand possible combinations.
The bar said the trolley reflects the core of Sir: ‘classic foundations, executed at the highest level – always with the guest at the centre’.
