Through his dishes, Flatmark honors the farmers, fishermen and producers whose work provides the raw materials that define Norwegian cuisine.<\/p>\n<p><img alt=\"oivindhaug-savoy-Jun 12 2026-594_web\" loading=\"lazy\" width=\"959\" height=\"718\" decoding=\"async\" data-nimg=\"1\" class=\"rounded-lg\" style=\"color:transparent\" src=\"https:\/\/www.europesays.com\/dk\/wp-content\/uploads\/2026\/08\/https:\/\/media.zenfs.com\/en\/forbes_contributor_845\/d321334dbed90c738afdd4e9dfae82fa.jpg\"\/><\/p>\n<p>CHEF NILS FLATMARK IN THE CAFE WATT KITCHEN, SAVOY 1918 HOTEL<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">In 2024, Flatmark was Nordic Chef of the Year and Nordic Chef Overall Winner; indeed, he&#8217;s the only Nordic chef to have won four gold medals in the competition. He was a member of the team that won gold at the Culinary Olympics, was Norwegian Champion in Culinary Arts, and has collected multiple Green Chef titles. Yet sitting across from him, the conversation quickly moves away from trophies and toward something much more fundamental: where ingredients come from, the people who produce them, and what and how much a chef should, or should not, do to them. His philosophy, he tells me, can be summed up in three words: &#8220;ekte, enkelt &amp; naturlig&#8221; &#8211; authentic, simple and natural. His cooking, he explains, is based on seasonal, predominantly local ingredients and produce, and &#8220;a strong connection to tradition, place and history.&#8221; While that might sound pretty straightforward, it&#8217;s considerably harder to execute.<\/p>\n<p>Learning The Norwegian Kitchen<img alt=\"Nils_F_Britannia_photo_Wil_Lee-Wright_BRIT3949\" loading=\"lazy\" width=\"960\" height=\"640\" decoding=\"async\" data-nimg=\"1\" class=\"rounded-lg\" style=\"color:transparent\" src=\"https:\/\/www.europesays.com\/dk\/wp-content\/uploads\/2026\/08\/https:\/\/media.zenfs.com\/en\/forbes_contributor_845\/cf03e8aefe07c334b297586c13e01fda.jpg\"\/><\/p>\n<p>FOR CHEF NILS FLATMARK, FRESH, LOCAL, NORWEGIAN PRODUCE IS A PRIORITY<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Flatmark&#8217;s professional education began as an apprentice under celebrated Norwegian chef Arne Brimi at <a data-ylk=\"slk:Vianvang;elm:context_link;itc:0;sec:content-canvas;\" data-yga=\"{&quot;yLinkElement&quot;:&quot;link&quot;,&quot;yLinkElementType&quot;:&quot;article_link&quot;}\" href=\"https:\/\/www.brimiland.no\/vianvang\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Vianvang<\/a>. His winning menu took inspiration from the vegetables, fruit and herbs grown at <a data-ylk=\"slk:Braattan Gaard;elm:context_link;itc:0;sec:content-canvas;\" data-yga=\"{&quot;yLinkElement&quot;:&quot;link&quot;,&quot;yLinkElementType&quot;:&quot;article_link&quot;}\" href=\"https:\/\/www.braattan.no\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Braattan Gaard<\/a>, a historic lakeside farm near Trondheim that dates back to 1813. He tells me, &#8220;I believe if you choose Norwegian, you choose a vibrant Norway.&#8221; That line explains a lot about his cooking.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">For Flatmark, sustainability is not simply about putting a green dish on a menu. It is about creating a closer relationship between his restaurant, his food, and the people who grow, raise and harvest what ends up on the plate.<\/p>\n<p>The Competition Chef<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Flatmark is a much decorated chef, with a long list of achievements, impressive enough to belong to a much older person. He won gold with the Norwegian National Culinary Team at the 2020 Culinary Olympics, gold at the Norwegian Championships, and gold at the King&#8217;s Cup in 2022. He was awarded Nordic Green Chef of the Year in 2022 and 2023, won the North Europe San Pellegrino Social Responsibility Award in 2022, and the Cordon Bleu Badge of Honor in 2023. Then, in 2024, came gold, and title of Nordic Chef Overall Winner, at the <a data-ylk=\"slk:Nordic Chefs Challenge;elm:context_link;itc:0;sec:content-canvas;\" data-yga=\"{&quot;yLinkElement&quot;:&quot;link&quot;,&quot;yLinkElementType&quot;:&quot;article_link&quot;}\" href=\"https:\/\/nkl.no\/konkurranser\/nordic-chef-challenge\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Nordic Chefs Challenge<\/a>, the premier culinary championship organized by the Nordic Chefs Association.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">But what is interesting about Flatmark is that all this competition hasn&#8217;t made him obsessed with complexity. If anything, it seems to have pushed him in the opposite direction. He talks about presenting ingredients in their natural form, so that the diner understands and appreciates what they&#8217;re eating. He believes that any flavors added to a dish, should lift the principal ingredient, not conceal it. He favors traditional techniques, but gives them what he refers to as &#8220;a modern, more restaurant-focused twist,&#8221; and that&#8217;s precisely what I found, when my husband and I sat down to eat.<\/p>\n<p><img alt=\"Hotel Savoy Juli 26 A1 193 (1)\" loading=\"lazy\" width=\"960\" height=\"640\" decoding=\"async\" data-nimg=\"1\" class=\"rounded-lg\" style=\"color:transparent\" src=\"https:\/\/www.europesays.com\/dk\/wp-content\/uploads\/2026\/08\/https:\/\/media.zenfs.com\/en\/forbes_contributor_845\/701524d21b9ef980eeec95024dfe7bd5.jpg\"\/><\/p>\n<p>CAFE WATT, HOTEL SAVOY 1918, OSLO, NORWAY<\/p>\n<p>Dinner At Caf\u00e9 WATT<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">&#8220;The Pannestekt Kamskjell, (pan-fried scallop with apple and elderflower) is a good place to start&#8221;, Chef Nils suggests. &#8220;It&#8217;s restrained, deceptively so. The scallop remains the star, while the apple provides some freshness, and the elderflower gives it a delicate aromatic lift. Sirdal trout (fjell\u00f8rret) is a mountain trout, farmed in -21\u00b0F glacial waters. It&#8217;s slow growth, in icy, clean, freshwater gives the fish a uniquely firm texture, low fat content, and a delicate, rich flavour. This is perhaps the dish that most clearly displays Flatmark&#8217;s relationship with Norwegian food. While there is something familiar and comforting about it, the execution is unmistakably contemporary.<\/p>\n<p><img alt=\"Savoy1918_a\u030apning034\" loading=\"lazy\" width=\"960\" height=\"640\" decoding=\"async\" data-nimg=\"1\" class=\"rounded-lg\" style=\"color:transparent\" src=\"https:\/\/www.europesays.com\/dk\/wp-content\/uploads\/2026\/08\/https:\/\/media.zenfs.com\/en\/forbes_contributor_845\/56ba7edf30c63447a12a825f4113ce1c.jpg\"\/><\/p>\n<p>CHEF NILS FLATMARK WITH ASSISTANT HEAD CHEF ANETTE MYRHAGEN<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">There&#8217;s classical technique that runs through the menu, from the duck liver mousse with currant compote, and the veal brisket with celeriac pur\u00e9e and semi-dried tomatoes, to the range of carefully balanced sauces; but it never feels like technique just for the sake of it. That is ultimately is what I took away from my both my conversation with Flatmark, and the meal that followed. Here is a chef with enough medals to justify making his food complicated, yet his instinct is to make it simpler. He wants his diners to recognize the trout, the potato, the grain, the scallop. He wants to know who produced it. He wants to use the whole ingredient and waste as little as possible.
