{"id":97239,"date":"2026-06-02T00:04:06","date_gmt":"2026-06-02T00:04:06","guid":{"rendered":"https:\/\/www.europesays.com\/dk\/97239\/"},"modified":"2026-06-02T00:04:06","modified_gmt":"2026-06-02T00:04:06","slug":"kadeau-in-copenhagen-is-the-worlds-newest-michelin-3-star-restaurant","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/dk\/97239\/","title":{"rendered":"Kadeau in Copenhagen Is the World&#8217;s Newest Michelin 3-Star Restaurant"},"content":{"rendered":"<p class=\"paragraph larva \/\/ lrv-u-margin-lr-auto  lrv-a-font-body-m   \">\n\t<a href=\"https:\/\/robbreport.com\/tag\/copenhagen\/\" id=\"auto-tag_copenhagen\" data-tag=\"copenhagen\" rel=\"nofollow noopener\" target=\"_blank\">Copenhagen<\/a> didn\u2019t have to wait very long to have a trio of <a href=\"https:\/\/robbreport.com\/tag\/michelin\/\" id=\"auto-tag_michelin\" data-tag=\"michelin\" rel=\"nofollow noopener\" target=\"_blank\">Michelin<\/a> three-star restaurants again.<\/p>\n<p class=\"paragraph larva \/\/ lrv-u-margin-lr-auto  lrv-a-font-body-m   \">\n\tWith Noma finally going through with its long-announced closing earlier this year (and before all the controversy surrounding Rene Redzepi flared up) the Danish capital was left with two restaurants at the pinnacle of global gastronomy: <a data-id=\"1234727744\" data-type=\"post\" href=\"https:\/\/robbreport.com\/food-drink\/dining\/geranium-worlds-50-best-restaurants-2022-rankings-1234727744\/\" rel=\"nofollow noopener\" target=\"_blank\">Geranium<\/a> and Jordnaer. But today Michelin revealed it\u2019s <a rel=\"nofollow noopener\" href=\"https:\/\/guide.michelin.com\/us\/en\/article\/michelin-guide-ceremony\/michelin-guide-nordic-denmark-finland-iceland-norway-sweden-2026-new-stars-bib-gourmands-special-awards\" target=\"_blank\">Nordic guide for 2026<\/a> and revealed that Kadeau would join the ranks of restaurants, as the guide puts it, \u201cworth a special journey.\u201d<\/p>\n<p class=\"paragraph larva \/\/ lrv-u-margin-lr-auto  lrv-a-font-body-m   \">\n\tSelf-taught chef Nicolai N\u00f8rregaard founded the original Kadeau on the island of Bornholm, located around 100 miles east of Copenhagen in the Baltic Sea. The restaurant is a celebration of the isle\u2019s ingredients that now operates seasonally from May to October, and boasts its own Michelin star. More than a decade ago N\u00f8rregaard brought his restaurant\u2019s ethos to the mainland, opening Kadeau in Copenhagen with a more formal approach than its island sibling. However the city location still leans heavily on the chef\u2019s upbringing in Bornholm.<\/p>\n<p class=\"paragraph larva \/\/ lrv-u-margin-lr-auto  lrv-a-font-body-m   \">\n\t\u201cMy grandfather grew his own vegetables, caught his own fish and preserved extensively to get through the winter,\u201d <a rel=\"nofollow noopener\" href=\"https:\/\/guide.michelin.com\/dk\/en\/article\/mindful-voices\/kadeau-bornholm-copenhagen-how-a-tiny-island-shaped-modern-danish-cuisine\" target=\"_blank\">N\u00f8rregaard told Michelin<\/a>. \u201cHis way of living has deeply shaped the way I think about cooking. When you grow up on an island like Bornholm, you naturally develop a strong connection to the land and the sea around you.\u201d<\/p>\n<p class=\"paragraph larva \/\/ lrv-u-margin-lr-auto  lrv-a-font-body-m   \">\n\tThe Copenhagen location\u2019s accolades eventually exceeded the original location, notching its second star in 2018. But the Kadeau story nearly ended during the pandemic. The restaurant group declared bankruptcy in <a href=\"https:\/\/www.foodandwinegazette.com\/15312\" rel=\"nofollow noopener\" target=\"_blank\">March of 2020<\/a>, as Covid-19 shutdowns exacerbated the group\u2019s financial troubles at the time.
