Head Chef Vira Chudasma opened Sovian Restaurant and Cocktail Lounge after noticing a need for fine dining options in Georgetown.<\/p>\n
Since its grand opening in April, the upscale European-style steakhouse has brought the tastes of southern France and Italy to the local community.<\/p>\n
“Texas has an established love relationship with steaks, so you\u2019ll find steakhouses in almost every market, but I wanted to bring something completely different,” Chudasma said. “The fine dining scene in Georgetown has historically been thin.\u201d<\/p>\n

Sovian\u2019s menu, curated and designed by Chudasma, sports steak and seafood options, including:<\/p>\n
Braised wagyu boeuf bourguignon, which is beef slow cooked in red wine from BurgundyCoq au vin, a red wine braised half chickenPremium steaks, including a 30-day dry-aged ribeye, and a 34-ounce bone-in cote de boeufGrilled Spanish octopusChudasma also created a signature side dish of roasted cauliflower and romanesco, served with a house-made salsa macha, and homage to her growing up vegetarian and pescatarian.<\/p>\n

Chudasma\u2019s travels throughout Europe during her career as a sommelier inspired the restaurant\u2019s curation, she said.<\/p>\n
She has a collection of 2,100 bottles in the Sovian wine cellar, from European vintages to global labels. Some options include Frank Family Cabernet Sauvignon and AIX Ros\u00e9 from Provence.<\/p>\n

Sovian is Chudasma\u2019s second restaurant in Georgetown, the first being Italian restaurant La Riv.<\/a><\/p>\n “I am really so blessed that Georgetown has embraced my restaurants,” Chudasma said. “I’m not even from around here and for a town to embrace what I am bringing is the testimony to the people of Georgetown.\u201d<\/p>\n
