Hoi zäme

I am looking to make fresh homemade pasta, and all the recipes I read recommend using 00 pasta (here's an example of such a recipe). What is the equivalent in Switzerland? When I go to Migros or Coop I have no idea which flour to buy.

Thanks

  1. 00 flour is sold in Coop – You’ll even get Caputo 00 in Coop.

  2. Some Migros/Coop stores carry Hartweizengriess (durum semolina) or rimacinata (re-milled semolina).

Mixing 50% Weissmehl + 50% Hartweizengriess gives a dough very close to what Italian pasta makers use.

  3. We have Pizza flour in most stores. But also all purpose works well. If you want a “Semonila” which is often more recommended than just the fine grain, you can get Knöpfli flour at Migros at least.
