This days i am eating pumpernikel for lunch in my office.

My work is quite isolated and i dont have a car. Nearest supermarket is 15min by walk. I only have an hour for lunch.
I got some weight from last year, as i eat too many fries and schnitzel after i began to work in germany. 😅 i am tyring to do a low calorie, low carb diet. I am also bit diabetic…so should be low sugar

For 2 weeks..i ate two slices of pumpernikel and one cup of low sugar protein shake for lunch..it was comfy and i also could save some money.

But this becoming so painful…as i dont have any joy in my lunch..

I am trying to eat salami and slice cheese together with pumpernikel..or yeah maybe bananas
I will have to bring this from home and put it in the fridge after i arrive at work…not sure it will bring my joy back for lunch.

Would you have a recommendable simple combination for pumpernikel or das pure..?

  1. You can try mixing Magerquark and some protein powder. Magerquark can be hard to eat so taste first before preparing for lunch.

  2. Maybe try some different spread options like Hummus, Schnittlauch-Käse, Sweet-Paprika, Bärlauch (all available at Aldi), grilled (stir-fried) veggies, scrambled-egg with topping, Tomato with olive oil and garlic, and so on!

  3. Get a nice butter if able, like “Gläserne Molkerei” to make it better. Otherwise i recomment to do “Frischkäse” with cucumber and or tomates and a bit of “Kräutersalz” that should enhance the freshnes and you dont feel the dryness of your bread. And if you dont give a f go for Leberwurst wirh butter. Cheers

  4. Just eat good, healthy sourdough bread. It tastes absolutely amazing, is very healthy, and should be about the same in kcals as Pumpernickel. Don’t torture yourself with that stuff when you don’t have to!

But if you are diabetic, that’s a serious health problem. You might have to make some big changes in your diet, workout, etc. talk to your doctor about what you should eat. It should be sustainable, since you will have to eat that way for the rest of your life if you want to stay as healthy as possible. So it shouldn’t contain mostly foods that you hate.

And visit your doctor regularly! For people with diabetes, it’s important to regularly check for other issues that are caused by diabetes like diabetic food syndrome, kidney disease, and atherosclerosis.

  5. If your goal is to lose weight, track your calories and additionally do some sports.

  6. cottage cheese/körniger frischkäse as a source of protein, with some herb salt or, my favorite, a teaspoon of crispy garlic chili oil. egg salad, cooked egg and remoulade or even grilled teriyaki tofu might also be an option.

Also, maybe for some variety, prepare overnight oats or something else as lunch for one day per week.

  7.  Oh, I love pumpernickel! Classic: avocado and egg; cottage cheese with colorful tomatoes and tomato salt; cream cheese with salmon/ cucumber/radish and sprouts; lettuce topped with shrimp; Gouda with pickles. And so much more. A classic German “Abendbrot”. 😀

Edit: there’s always a light version of almost everything. The light cresm cheeses are very tasteful too.

  8. Smoked salmon is also nice with Pumpernickel. Not the cheapest, but maybe a nice change for a few days.

  9. Apply pesto , butter and some grated cheese. Air fry it or toast it using oven.

  10. You could make a salad and add pumpernickel crumbs to it, I’ve done that with cucumber and sugarfree soy yoghurt (in a cursed tzatziki kind of way)

But if you’re really going for low carb then it would be better to drop bread entirely imo? You can go for bean, lentil or chickpea salads, they should also be more filling (and can be as simple as dumping two cans of ingredients in a tupperware and seasoning it with salt and olive oil)

  11. Don’t make yourself unhappy. Get more steps in and eat whatever you want (within reason) 🤷‍♀️

  12. Pumpernickel is nice with pickles. Instead of Salami and cheese (fat) use Rauchfleisch or raw ham and Bratenaufschnitt, all pure muscle meat with nearly no fat. Pumpernickel, some fresh cheese instead of butter and Rauchfleisch is just delicious

  13. What I really like is half a bread roll (Kaiserbrötchen) a good slice of Gouda and top it witha slice of Pumpernickel.

  14. Krenfrischkäse with fresh cucumber slices or thin Beinschinken slices on Pumpernickel or fresh rye bread – delicious. Tuna salad or körniger Frischkäse mit Kräutern on Pumpernickel – very good too.
