La veille, ces personnes\u00a0avaient d\u00e9jeun\u00e9 dans le restaurant L\u2019Unik, \u00e0 Bruz, pr\u00e8s de Rennes (Ille-et-Vilaine), dans le cadre d\u2019un s\u00e9minaire d\u2019entreprise. La Direction d\u00e9partementale de la protection des populations (DDPP), organisme charg\u00e9 de la s\u00e9curit\u00e9 des aliments, a proc\u00e9d\u00e9 \u00e0 des contr\u00f4les dans les cuisines. Suite \u00e0 cela, Samuel Burgos, co-g\u00e9rant de l\u2019\u00e9tablissement, se dit<strong> \u00ab\u00a0rassur\u00e9\u00a0\u00bb<\/strong>. <strong>\u00ab\u00a0Les contr\u00f4les se sont bien pass\u00e9s, m\u00eame si on \u00e9tait confiants d\u00e8s hier\u00a0\u00bb<\/strong>.<\/p>\n<p>Une erreur lors de la capture\u00a0?<\/p>\n<p>Selon les derniers \u00e9l\u00e9ments, le probl\u00e8me remonterait au moment o\u00f9 le poisson a \u00e9t\u00e9 p\u00each\u00e9. L\u2019histamine est une mol\u00e9cule biologique naturellement pr\u00e9sente chez l\u2019\u00eatre humain et les animaux. Mais chez certains poissons, comme le thon, cette mol\u00e9cule peut se d\u00e9velopper si le produit est laiss\u00e9 \u00e0 chaleur ambiante, provoquant une prolif\u00e9ration bact\u00e9rienne. Le risque de contamination bact\u00e9rienne peut ainsi survenir<strong> \u00ab\u00a0lors de la capture et de la pr\u00e9paration du poisson qui vient d\u2019\u00eatre p\u00each\u00e9\u00a0\u00bb<\/strong>, pr\u00e9cise l\u2019Anses (Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation).<\/p>\n<p>Les analyses se poursuivent. Mais si cette hypoth\u00e8se est confirm\u00e9e,<strong> \u00ab\u00a0on aurait pu servir ce thon bien cuit ou m\u00eame surgel\u00e9, \u00e7a n\u2019aurait chang\u00e9 au probl\u00e8me\u00a0\u00bb<\/strong>, pointe le co-g\u00e9rant du restaurant, chamboul\u00e9 par cet \u00e9v\u00e9nement mais rassur\u00e9 que toutes les victimes aillent mieux.<\/p>\n<p>\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"Les dix victimes d\u2019une intoxication au thon sont sorties d\u2019affaire.
