Verdict\u00a0: les r\u00e9sultats sont loin d\u2019\u00eatre rassurants.<\/p>\n<p>Du sucre dans presque toutes les saucisses<\/p>\n<p>\u00c0 l\u2019exception de trois chipolatas, <strong>tous les produits test\u00e9s contiennent du sucre<\/strong>\u00a0: <strong>saccharose<\/strong>, <strong>sirop de glucose<\/strong> ou <strong>dextrose<\/strong>. Leur r\u00f4le\u00a0? <strong>R\u00e9duire l\u2019amertume<\/strong>, <strong>colorer la viande<\/strong> \u00e0 la cuisson et <strong>prolonger la conservation<\/strong>. Mais ces sucres cach\u00e9s s\u2019ajoutent \u00e0 une liste d\u2019<strong>additifs<\/strong> peu reluisants.<\/p>\n<p>Additifs\u00a0: une liste longue comme le bras<\/p>\n<p>Neuf merguez, quatre chipolatas et l\u2019ensemble des saucisses v\u00e9g\u00e9tales sont bourr\u00e9es d\u2019<strong>additifs<\/strong>. Parmi les plus probl\u00e9matiques\u00a0:<\/p>\n<p><strong>Carmin E120<\/strong>, connu pour ses r\u00e9sidus <strong>allergisants<\/strong><\/p>\n<p><strong>Gomme xanthane E415<\/strong>, <strong>gomme de caroube E410<\/strong><\/p>\n<p><strong>M\u00e9thylcellulose E461<\/strong>, suspect\u00e9e de <strong>perturber le microbiote<\/strong> et de favoriser des <strong>inflammations intestinales<\/strong>.<\/p>\n<p>Certains additifs \u00e9chappent m\u00eame \u00e0 la classification classique en \u00ab\u00a0E\u00a0\u00bb, rendant leur d\u00e9tection plus difficile pour les consommateurs.<\/p>\n<p>Viande\u00a0: quand la quantit\u00e9 ne rime pas avec qualit\u00e9<\/p>\n<p>\nLes <strong>taux de viande<\/strong> varient fortement selon les marques. Quelques exemples\u00a0:<\/p>\n<p><strong>Monoprix Bio<\/strong> et <strong>Bigard<\/strong>\u00a0: jusqu\u2019\u00e0 <strong>85\u00a0% de viande<\/strong> dans les merguez<\/p>\n<p><strong>Carrefour Simpl<\/strong> et <strong>Socopa<\/strong>\u00a0: taux faibles et <strong>graisse en exc\u00e8s<\/strong><\/p>\n<p><strong>Lidl<\/strong>\u00a0: pr\u00e9sence signal\u00e9e de <strong>fragments d\u2019os<\/strong> et de <strong>cartilage<\/strong><\/p>\n<p>Autre mauvaise surprise\u00a0: des <strong>traces de porc<\/strong> d\u00e9tect\u00e9es dans des merguez cens\u00e9es \u00eatre au <strong>b\u0153uf et au mouton<\/strong>. Et seules <strong>deux marques<\/strong> utilisent du <strong>mouton fran\u00e7ais<\/strong>.<\/p>\n<p>Les saucisses v\u00e9g\u00e9tales, pas toujours clean non plus<\/p>\n<p>Moins grasses que les versions carn\u00e9es, les <strong>saucisses v\u00e9g\u00e9tales<\/strong> n\u2019en sont pas pour autant irr\u00e9prochables. L\u2019\u00e9tude recommande de privil\u00e9gier celles <strong>\u00e0 base de c\u00e9r\u00e9ales et de l\u00e9gumineuses<\/strong>.
