Aux fourneaux, on retrouve Hitoshi Minatani, le trentenaire surdou\u00e9 qui avait permis au Bistrot Janine (Paris 17) d\u2019\u00eatre \u00e9lu meilleur bistrot par le guide Lebey.<\/p>\n<p>A peine un mois apr\u00e8s l\u2019ouverture de Fugue, la formule du midi (entr\u00e9e\/plat\/dessert) \u00e0 30e et le menu \u00ab\u00a0d\u00e9gustation\u00a0\u00bb du soir (70e) ont d\u00e9j\u00e0 s\u00e9duit les gourmets du quartier et les \u00ab\u00a0foodies\u00a0\u00bb avertis. Il faut dire que le chef sait comme personne twister les classiques, pour en donner une version moderne et succulente\u00a0: aujourd\u2019hui au d\u00e9jeuner, un fondant filet mignon de cochon en croute accommod\u00e9 d\u2019une sauce sancho acidul\u00e9e, et en dessert une profiterole parfaite, tout autant dans sa dose en chocolat que dans sa p\u00e2te \u00e0 chou.<\/p>\n<p>C\u00f4t\u00e9 boissons, Victor Baraton-Dorat, l\u2019autre associ\u00e9 dans l\u2019affaire propose une carte 100% sourc\u00e9e, \u00ab\u00a0que des amis vignerons dont je connais le travail\u00a0\u00bb, confie-t-il. Il arrive ainsi \u00e0 afficher des prix raisonnables, \u00e0 partir de 5e, sur des verres de haute vol\u00e9e.
