Ouvert aux professionnels de la restauration traditionnelle, cet \u00e9v\u00e9nement met chaque ann\u00e9e \u00e0 l\u2019honneur l\u2019un des plats embl\u00e9matiques de la r\u00e9gion.<\/p>\n<p style=\"text-align: center;\" data-start=\"171\" data-end=\"574\"><strong>REVOIR L\u2019\u00c9DITION 2024<\/strong><\/p>\n<p style=\"text-align: center;\" data-start=\"171\" data-end=\"574\">\n<p data-start=\"576\" data-end=\"1299\">Depuis 2003, Strasbourg c\u00e9l\u00e8bre la bouch\u00e9e \u00e0 la reine par un concours r\u00e9unissant une douzaine de restaurateurs. Le r\u00e8glement impose que la recette soit \u00ab traditionnelle \u00bb, c\u2019est-\u00e0-dire conforme \u00e0 celle connue et reconnue par les gourmets alsaciens. Les concurrents doivent pr\u00e9senter un appareil \u00e0 bouch\u00e9e comprenant obligatoirement veau, volaille, quenelles et champignons de Paris. \u00c0 chacun ensuite d\u2019interpr\u00e9ter la tradition : quenelles de veau ou de volaille, cr\u00eates et rognons de coq, ris de veau, champignons tourn\u00e9s ou simplement coup\u00e9s en quartiers. Derri\u00e8re ces quatre ingr\u00e9dients de base, les cuisiniers alsaciens expriment leur savoir-faire et leur personnalit\u00e9. Sur deux cents bouch\u00e9es, aucune ne se ressemble.<\/p>\n<p data-start=\"576\" data-end=\"1299\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter
