Une fois sur deux, l\u2019enseigne y perd en \u00e2me ce qu\u2019elle croit y gagner en meubles. Le Pantagruel du bon c\u00f4t\u00e9 de l\u2019audace, l\u00e2chant, en cette rentr\u00e9e, ses quatre petits murs du Sentier (d\u00e9sormais le\u00a0<a href=\"http:\/\/www.lefigaro.fr\/gastronomie\/chez-panurge-le-charme-bon-ton-de-la-cuisine-bourgeoise-20250626\" data-fig-type=\"Article\" data-gtm-custom-categorie=\"navigation\" data-gtm-custom-action=\"crossclick\" data-gtm-custom-label=\"Contextuel\" data-gtm-event=\"customEventSPE\" data-fig-domain=\"LEFIGARO\" target=\"_blank\" rel=\"noopener\">Panurge<\/a>) pour succ\u00e9der \u00e0 ce qui fut, tour \u00e0 tour, Chez Pierre, le Z\u00e9bulon, l\u2019Aube. Cette fois pourrait bien \u00eatre la (tr\u00e8s) bonne, car si la salle \u00e0 double d\u00e9tente, certes feutr\u00e9e, s\u2019emm\u00eale un peu les couleurs et les tentures, les fourneaux de Jason Gouzy se lib\u00e8rent en volume comme en amplitude et impressionnent \u00e0 cultiver une rare cuisine de la variation. Exercice souvent casse-pipe qui emballe, ici, autour de l\u2019araign\u00e9e de mer du Guilvinec, du homard breton, du maigre corse, du pigeon du G\u00e2tinais et des derniers melons proven\u00e7aux. Les uns, les autres, tour \u00e0 tour trait\u00e9s en trilogie, virevoltant dans les textures, les cuissons, les sauces, les terre-mer et les \u00e9motions qu\u2019on en retire, au risque parfois d\u2019en faire un peu trop.
