Autre changement de taille, l&rsquo;arriv\u00e9e en cuisine du chef barcelonais <strong>Romain Fornell<\/strong>. Aliment\u00e9 par la ferme d\u2019esturgeon de la maison, install\u00e9e en Aquitaine, le menu propose une belle s\u00e9lection de caviars (Baeri, Oscie\u0300tre\u2026), a\u0300 d\u00e9guster \u00e0 la cuill\u00e8re en nacre ou sur des blinis maison comme l\u2019aimait <strong>Yves Saint Laurent<\/strong>.
