Asseyons-nous toutes et tous ensemble \u00e0 la table du Diable Bleu, un resto patin\u00e9 comme on l\u2019aime, charg\u00e9 <\/strong><b>d\u2019histoire, qui semble \u00eatre la derni\u00e8re vraie adresse pour viandard(e)s du centre-ville.\u00a0<\/b><\/p>\n<p>Le Diable Bleu, c\u2019est<strong> ce bistrot situ\u00e9 \u00e0 l\u2019angle du quai des P\u00eacheurs et de la rue Saint-Guillaume<\/strong>. Install\u00e9 l\u00e0 depuis les ann\u00e9es 1600, le b\u00e2timent a abrit\u00e9 bien des commerces au fil du temps,<strong> jusqu\u2019\u00e0 devenir un restaurant.<\/strong><\/p>\n<p><strong>Inaugur\u00e9 par le regrett\u00e9 Rob, en 2006<\/strong>, le Diable Bleu est devenu <strong>LE restaurant \u00e0 viandes par excellence<\/strong> \u00e0 Strasbourg, un lieu pour les amateurs\/rices de pi\u00e8ces bouch\u00e8res de qualit\u00e9.<\/p>\n<p>                <img width=\"375\" height=\"500\"           \u00a9 Bastien Pietronave \/ Pokaa<\/p>\n<p><strong>Repris au d\u00e9but de l\u2019ann\u00e9e 2025<\/strong>, dans un cadre quasi inchang\u00e9, <strong>le restaurant a perp\u00e9tu\u00e9 cette tradition viandarde<\/strong> qui a fait la renomm\u00e9e du Diable Bleu.<\/p>\n<p>D\u00e9sormais, <strong>en plus de proposer de la viande d\u2019exception<\/strong>, le restaurant affiche aussi <strong>un visage plus accessible<\/strong> pour convaincre une client\u00e8le du midi, comme du soir, <strong>qui se presse d\u00e9sormais 7 jours sur 7.<\/strong><\/p>\n<p>                <img Strasbourg centre, le Diable Bleu est probablement <strong>le dernier restaurant r\u00e9ellement sp\u00e9cialis\u00e9 dans la viande<\/strong>, et il l\u2019affiche fi\u00e8rement.<\/p>\n<p>Avec ses crochets de bouchers fix\u00e9s au plafond,<strong> et ses r\u00e9frig\u00e9rateurs qui d\u00e9voilent des pi\u00e8ces enti\u00e8res aux visiteurs\/ses<\/strong>, pas de doute, on est bien <strong>dans le temple de la viande.<\/strong><\/p>\n<p>Ici, <strong>on peut choisir une viande \u00e0 la carte<\/strong>, un onglet ou une entrec\u00f4te, mais surtout, <strong>on peut s\u00e9lectionner la pi\u00e8ce de son choix<\/strong>, son grammage, son affinage (maturation) et son origine.<\/p>\n<p>                <img width=\"375\" height=\"500\"           \u00a9 Bastien Pietronave \/ Pokaa<\/p>\n<p>Des membres de l\u2019\u00e9quipe, compos\u00e9e de sp\u00e9cialistes du baraque, <strong>viennent \u00e0 table pour nous conseiller<\/strong> sur la teneur en gras des viandes, sur leur tendret\u00e9, leurs saveurs ou leur longueur en bouche,<strong> et chaque partie du b\u0153uf a sa sp\u00e9cificit\u00e9<\/strong>. Si vous aimez la viande, c\u2019est assez passionnant.<\/p>\n<p>Faux-filet, filet, <strong>entrec\u00f4te de race montb\u00e9liarde ou charolaise de 300 \u00e0 500 grammes<\/strong>, c\u00f4te de b\u0153uf compl\u00e8te, viande fondante ou plus ferme : <strong>le plus difficile, c\u2019est de choisir.<\/strong><\/p>\n<p><strong>La viande dans tous ses aspects<\/strong> est donc la star de la table au Diable Bleu, et puisque l\u2019on vient se faire plaisir \u00e0 tailler le bout de gras, <strong>autant ouvrir une petite quille.<\/strong><\/p>\n<p>                <img width=\"375\"           \u00a9 Bastien Pietronave \/ Pokaa<\/p>\n<p>Amoureux de vins (et de spiritueux),<strong> J\u00e9r\u00f4me, le patron des lieux, a pr\u00e8s de 150 r\u00e9f\u00e9rences dans sa cave<\/strong>, dont des bouteilles d\u2019exception et <strong>quelques quilles du patron dont il a le secret.<\/strong><\/p>\n<p>D\u2019ailleurs, <strong>une fois par mois d\u00e8s janvier<\/strong>, il organisera <strong>des soir\u00e9es \u00ab ram\u00e8ne ta quille\u00a0\u00bb<\/strong>, le dimanche ou le lundi soir. <strong>Chaque tabl\u00e9e peut ramener sa bouteille,<\/strong> sans droit de bouchon si tout le monde s\u2019envoie de la viande \u00e0 la coupe, pas mal !<\/p>\n<p>Et si le Diable Bleu est le king de la viande et du vin, <strong>il peut Bleu est<strong> une r\u00e9f\u00e9rence en termes de viandes<\/strong>, et on y mange aussi <strong>des recettes de bistrot bien pens\u00e9es<\/strong>, le midi comme le soir, et \u00e7a anime le quartier.<\/p>\n<p>Les gens du coin ou les travailleurs\/ses viennent aussi pour la nouvelle carte, <strong>qui fait honneur \u00e0 la cuisine de bistrot \u00e0 la fran\u00e7aise d\u00e8s les entr\u00e9es : o<\/strong><strong>s \u00e0 moelle, croque-monsieur \u00e0 la truffe,<\/strong> escargots d\u2019Alsace, cromesquis de boudin, camembert chaud, et m\u00eame terrine de campagne faite manger ! <\/strong><strong>Cheeseburger avec steaks matur\u00e9s<\/strong>, boudin noir grill\u00e9, c\u00f4te de veau, <strong>civet de gibier ou magret de canard.<\/strong> Quelle douce po\u00e9sie.<\/p>\n<p>En fin de repas, <strong>m\u00eame les desserts sont du terroir,<\/strong> avec kougelhopf perdu, cr\u00e8me br\u00fbl\u00e9e, profiterole ou omelette norv\u00e9gienne
